Bagels

VEGAN. Sourdough bagels done in my whole-grain full-flavor style - boiled but still not as chewy on the crust as some. I typically do them plain or with toppings of either onion or poppyseed. Keep in the bag and eat in a couple of days or freeze.

Biscotti

Two interesting variations on the typical biscotti flavors: Chocolate Almond with fresh-milled cardamom and Sweet Potato Tart Cherry. The chocolate is very crunchy with a deep chocolate flavor. The Sweet Potato instead has a much softer texture with the chewy tart cherries and cinnamon rounding out the flavor. This keep for at least a couple of months and so are easy to keep in your pantry or to ship to friends and relatives.

Cereals

I've tried some plain cracked sourdough cereals before, but currently have been doing a couple of more flavorful options. The Chocolate Barley Pecan Granola is rich without being too sweet and can be eaten for breakfast, snack, or as a desert topping. It contains toasted barley and also honey, butter, and cinnamon to fill out the chocolate flavor. The Sunflower Raisin Granola bars are tangy from the sourdough cultured grains and slow toasted to a chewy texture. This granola bar takes three-days to make - how is that for slow food!

Dairy

Dairy can be dropped off in a cooler on your porch or at the common house large fridge. Please be diligent about returning bottles because at $1.50/bottle I'll start losing money quickly and I don't want the hassle of tracking individual deposits. I can only do 1/2 gallons right now because I only had one request for quarts and I have to buy a dozen at a time. Your house # will be on the bottle cap if it is at the common house/your house to try and keep this all straight.

Dried Bread

This will be available based on my supply of leftovers. I've tried some herbed croutons, cinnamon sugar snacks, and plain so that you can make your own stuffing/bread puddings.

English Muffins

Baked free-form on the hearth, but flattened out on both sides by flipping them over when I load them into the oven from the proofing boards.

I've played around with a variety of things in this category, but don't do too much currently. Mostly I do now an "Everything Round" which is a little like a bialy with a bigger variety of toppings.

Flours and Grains

With Red Tail Grains at the Carrboro Market, I've stopped trying to support people's fresh milled flour needs except by special request. However I do still bring the fresh cracked oats so that you can get more texture and flavor from your oatmeal. I like to soak 1 part Oats in 2 parts liquid (milk, water, etc.) overnight and then simmer them for about 10 minutes to cook. You might need to add a little more liquid.

Gluten Alternative

While I don't maintain a gluten-free facility, I do make some baked goods from non-gluten grains. These selections do not include any of the grains such as wheat and relatives like Spelt, Kamut, Rye, or Barley. I use a separate mill dedicated to milling the gluten alternative grains I have used: oats, buckwheat, corn, rice, and sorghum. I also take some basic precautions to keep things separate. However these are NOT safe for Celiac sufferers or anyone close. These baked goods however do have the distinction of using a simple set of ingredients from whole unprocessed foods.

Pastries

This is a little variation on the "things with butter" category I have been working on. It uses sourdough and no eggs so is closer to my breads, but uses sweetened butter and chocolate or fruit fillings to make it a nice treat.

Scones

I make this with an Irish Soda Bread recipe so that the scones come out very different from a muffin. They are crusty on the outside and soft on the inside with less fat used than a biscuit.
